FOOD: Eggs with spinach, fresh tomato and feta

Here is a one-pan recipe that is beautifully flavoured and freshly presented, which will surely impress your family and friends.Ingredients:4 large eggs200 grams baby spinach1 large tomato (chopped)100 grams feta3 tablespoons olive oilsalt and pepper to taste
Method:
Wash your spinach and set aside.
Add olive oil to frying pan and wilt spinach for a few minutes.
Make 4 holes in the spinach and crack the eggs in the centre of them.
Add your chopped tomato.
Place lid on top and allow to cook on low heat for about 5 minutes.
Sprinkle feta on top and serve.

For the mini dish, we used the same method but with a handful of spinach, one egg, 1/4 tomato and lightly sprinkle some feta.
